That Time I Made a Carnival Melting Chocolate Cake

If there's one thing that everyone misses from Carnival cruises, it's the chocolate melting cake.


Carnival has the recipe online, and it always sounded easy enough, but I never took the time/effort to try it...

Until I wanted to make it for my video blog! (video at the end of this post.) The original recipe is by weight (ugh, yeah, cause EVERYONE has a kitchen scale??) and for 4 servings.

I converted it to volume measurements and for 1 serving (though frankly, that's plenty for me and Husband to split). But I also put it on BigOven for 2 servings so that you print it and/or can adjust it for more servings.

Carnival Melting Chocolate Cake
(Printable recipe)

1.5 oz semisweet chocolate
3 Tbsp unsalted butter
2 Tbsp granulated sugar
1 egg
1.5 Tbsp flour
Cooking spray
Optional: vanilla ice cream


Directions:

1) Put the chocolate and butter in a microwave-safe bowl and microwave for 30 seconds.

2) Stir the butter and chocolate and microwave for 15-30 second intervals until the chocolate is fully melted.

3) Whisk the egg and sugar together until combined in a medium bowl.

4) Whisk in the flour until just combined.

5) Whisk the chocolate into the egg mixture a little bit at a time (you don't want to cook the egg).

6) Pour the mix into one-or-more greased ramekins (depending on the size, mine is 6 oz/175ml). Note that the cake doesn't really rise at all.

7) Bake at 390°F for 11 or 14 minutes depending on if you use two ramekins or one.

8) Serve immediately, optional: with vanilla ice cream

9) Enjoy!


Note: For resizing the recipe, 2 Tbsp = 1/8 of a cup; 4 Tbsp = 1/4 cup; etc.
